A Vermont tradition with a new twist
Dunc’s Maple Rum starts in the earliest days of spring. We trudge through snowy acres in the hills around Dunc’s Mill, tapping hundreds of native sugar maple trees. We then slowly boil the collected sap, producing a sweet, robust syrup, and add it to our sugarcane rum.

Dunc’s Maple Mojito
- 2 ounces Dunc’s Maple Rum
- 3/4 ounce simple syrup
- Club soda or seltzer
- 1/2 lime
- Mint leaves
- Fresh mint sprigs
- Crushed ice
In the bottom of a highball glass, muddle the mint leaves and simple syrup. Squeeze the lime into the glass, drop the hull, and stir briefly. Fill the glass with crushed ice, pour in rum, and fill the glass with the soda or seltzer. Garnish with the mint sprig.
Maple Rickey
- 2 ounces Dunc’s Maple Rum
- 1/2 ounce lime juice
- Club soda or seltzer
- Lime wedges
Rim a highball glass with a lime wedge, and fill the glass with ice cubes. Add rum and lime juice, and top with soda or seltzer. Squeeze the lime wedge into the drink, and drop it in. Stir briefly and enjoy.
Dunc’s Hot Toddy
- 2 ounces Dunc’s Maple Rum
- 2 ounces hot water
- 1 teaspoon honey
- 3 whole cloves
- 1 cinnamon stick
- 1 slice lemon
- 1 pinch nutmeg
Combine the rum, hot water and honey in a mug. Add cinnamon, cloves and lemon. Sprinkle nutmeg atop and enjoy on a cold night.
